It makes the most awesome chips from potato, sweet potato or any other veg such as carrot or parsnip. It means I can use my best quality oil - always extra virgin olive oil - in just the right amount, and I can get a perfect result every time without have to toss them in the oven, have them stick to the tray and so on.
